My Santoko arrived today. I have only used it once to make a large salad, but as soon as I handled it, I loved it.I became familiar with Damascus knives a couple of months ago after buying a Xinzuo Nakiri that has stayed razor sharp after several weeks of use. The Xinzuo is £50.00 less than the othe brandes, so I was expecting some compromises. I examined the knife closely & I can say there are no compromises; in fact the grip on the Xinzuo is better shaped to fit the hand. It is a bit larger in diameter and is rounded. It is very comfortable. The Xinzuo's grip is rather square shaped & smaller on their models. The Xinzuo comes with a better sheath, however that is easy to put on & take off and it locks in place with a pin. The Kyoko's sheath is harder to put on & take off. But when I'm not using a chef's knife, it is stored in a magnetic bamboo block, so the sheath doesn't matter to me.The knife came razor sharp with a highly-polished blade. I tested it on paper before making my salad. I'm already thinking about the cleaver knife.
