I work at a poultry shop, butchering chicken all day every day. I got sick of the crappy knives provided and decided to buy my own. It arrived yesterday and I was immediately impressed by the fit and finish of the knife.I took it in to work today, and it was amazing. I had to have cut up probably 200 chickens today, around the joints and through the bones, and it held an edge through all of it. The only time I had to hit the honing steel was after I accidentally nicked the stainless steel table we cut on, and that was just running it over the honing steel a couple times.The knife is absolutely fantastic, and the only thing that isn't perfect is the sheath they provided for it.
